ULTIMATE MINI BROWNIES


Hey Ya'll I'm back with another post. So yesterday I made brownies and to my surprise they came out so freaking good. I had to share this recipe with ya'll. I actually got a Ghirardelli Caramel Brownie of chocolate bar for Christmas in my gift bag and although I like chocolate; I am more of a sour candy type of girl. So I was thinking of how I would use this and just like a light bulb that goes off I thought bomb brownies. This is actually what the company uses in their brownies too! so lets get started with the ingredients. 

INGREDIENTS:
 Brownie Mix
  1/2 cup butter
  1/2 cup sugar (room temp)
  2 eggs (room temp)
  3 oz box Nestle Sem-sweet chocolate morals
  3.45 oz bar Ghirardelli Caramel Brownie bar
  1 tsp vanilla
  1 cup flour
  1/2 cup pecans
  


Ok So first things first be sure to pre-heat the oven to 350` F. We are going to take the first 2 ingredients and mix them together until they are well incorporated. after that then you add the eggs 1 at a time. NOTE: be sure to scrape the side so all the ingredients get mixed together. 



After we do that. then we can that it rest while we get to the fun part. Which is the Chocolate!!
We are going to start by making our own double boiler. Now if you already have one that is fine. To be honest I don't see the point in buy one. It's just added space. Ok so we take a pot and fill it with water a little less then half way. Place it on the stove and let the water come to a small boil. once our water is boiling then we take a bowl (make sure the boil is cooking safe). We want the bowl to be able to sit on top of the pot rim so it will create steam.
Now you add the Nestle chocolate morals and let it start to melt.

Ok so now we are going to act like James from Willie Wonka and open up of Ghirardelli Golden chocolate bar ha ha. 

We then break up the chocolate in small pieces for it to easily melt. you can use a Knife if you want but, I will to show my chocolate some love!

We are going to add that to rest of the chocolate and just a whisk to melt it. 

Once it has melted. we then want to add 1 tsp of vanilla to mix and bomb we done with this part!

This part goes by fast so make sure to pay close attention. All we do is add the melted chocolate to the butter/sugar mixture. Be sure to blend that very well. Once blended then, we are going to add the flour all at once. blended that until well incorporated. and we are almost done...


Now it's time to add the Pecans! oh how I love chocolate and nuts together! Just go ahead a mix that really quick and bomb our brownie mix is done!

take the mixture and with a spoon we are going to drop the brownie mixture into our 4 oz mason jars! Aren't they so cute! I love these mason jars! they are easy to clean out, portable and cute to make a  party especially for New Yours. NOTE: but enough mixture to just cover the top of the jar. 


The mixture will be enough for 5 mason jars. If you are need to make more then just double the ingredients and will come out with 10 jars. Plop these babies in a 350 F oven for 60 minutes.

This is what they look like after 60 minutes of being in the oven. Now the way you can tell if they are done is pretty much how you like you brownies. I like mine between a cakey and fudgey brownie. If you like you'res more cakey then you will cook 10 minutes extra. if you like you'res more fudgey then you will cook 10 minutes less. 

Now I made a quick apple caramel topping with the almonds that you see on top of the brownies. For this part you can do What ever topping you like!

LAST HOLIDAY MARTINI


HEY YA'LL IM BACK WITH ANOTHER ONE (IN MY BIGGIE VOICE HA HA). SO I'VE BEEN THINKING ABOUT WHAT I SHOULD MAKE FOR MY NEXT VIDEO AND BLOG POST AND I REALLY DIDN'T WANT TO DO ANOTHER SIDE DISH, OR DESSERT, BUT I DIDN'T KNOW WHAT ELSE TO MAKE THAT WOULD BE REALLY GOOD. HOWEVER, LATER THAT DAY WHILE I TALKING TO MY MOM ABOUT WHAT I SHOULD MAKE SHE ACTUALLY GAVE ME THE IDEA OF MAKING A REALLY COOL DRINK BUT TO CHALLENGE MYSELF IN HOW I WOULD MAKE IT. SO AFTER A FEW HOURS OF GOING BACK AND FORTH WITH IDEAS AND LOOKING AT MY FLAVOR BIBLE; I THEN  CAME UP WITH THIS DRINK! O.M.G. IS ALL I CAN SAY ONCE YOU TRY THIS! YA'LL WON'T BELIEVE HOW GOOD IT IS. IT'S DEFIANTLY THE PERFECT DRINK TO END 2015 AND START 2016 WITH A BANG! I CAME UP WITH THE NAME AFTER TALKING TO MY DAD WHO IS THE KING OF NAMING HOW HIS DISHES BACK AT HOME. AND I LIKE TO CALL IT THE LAST HOLIDAY MARTINI
YOU MIGHT BE THINKING WHY WOULD I CALL IT THAT. WELL THAT IS BECAUSE THIS DRINK IS GOOD AND SPICY THAT IT WILL LEAVE YOU SAYING "YOU REMEMBER THAT LAST HOLIDAY WHEN..." HA HA. NO LIE. 



INGREDIENTS:
  Spicy Sugar Mix:
    1/2 jalapeno (leave seeds and ribs in)
    1/2 cup sugar



INGREDIENTS:
Cranlapeno sauce:
   1 whole jalapeno rough chopped
   1 1/2 cup cranberries
   1 cup sugar (white)
   1/2 cup water
   1/2 jalapeno (seeds and ribs included)

NOW ITS TIME TO MAKE THE SAUCE. ALL YOU NEED TO DO IS ADD THE 4 INGREDIENTS INTO THE POT. NOTE: THE WHOLE JALAPENO THAT I ADDED. IS PARTICALLY DE-SEEDED. I LEFT SOME SEED AND RIBS IN THE PEPPER FOR A LITTLE MORE HEAT. IF YOU DECIDE TO TAKE OUT ALL THE SEEDS AND RIBS THEN IT WILL NOT BE AS SPICY. ONCE YOU HAVE ADDED INGREDIENTS, THEN YOU WANT TO STIR EVERYTHING TOGETHER AND LET IS SIMMER ON MEDIUM HEAT AND COVERED WITH A LEAD FOR 20 MINUTES. BE SURE TO STIR  SO SAUCE DOES NOT STICK TO POT.

HERE IS WHAT YOUR SAUCE SHOULD LOOK LIKE AFTER 20 MINUTES OF COOKING. AS YOU CAN SEE THE CRANBERRIES A MORE MUSHY AND TRANSLUCENT AND THE JALAPENO HAVE CHANGED THEIR COLOR TOO! 

 NOW WE ARE GOING TO TRANSFER THIS TO OUR BLENDER AND THEN THAT IS WHEN YOU WILL ADD THE LAST INGREDIENT (WHICH IS THE 1/2 JALAPENO). AND GET TO BLENDING BABY!

ONCE WE HAVE BLENDED OUR LIFE AWAY. OUR SAUCE SHOULD LOOK LIKE THIS. DO YOU SEE THAT BIGHT CRANBERRY RED COLOR! OMG IT'S BEAUTIFUL JUST LOOKING AT IT! OK LET'S MOVE ON.

OK DON'T WORRY WE ARE ALMOST DONE. NOW IT'S TIME TO POUR THAT RICH SWEET/SPICY SAUCE THROUGH A MASH STRAINER. WE JUST WANT PURE SAUCE AND NOT THE SKINS OF THE CRANBERRIES AND JALAPENOS. ONCE WE HAVE STRAINED ALL THE SAUCE; WE ARE GOING TO THEN PUT THE CONTAINER IN THE FREEZER TO ALLOW IT TO COOL DOWN FOR ONLY 10 MINUTES. NOTE: YOU CAN MAKE THIS SAUCE AHEAD OF TIME TO SAVE YOU TIME  AND JUST STORE IT IN AN AIR TIGHT CONTAINER. ONLY GOOD FOR A WEEK. 


INGREDIENTS:
martini:
 Spicy Sugar mix 
 hand full of ice
 4 tbsp Cranlapeno sauce
 1 oz vodak (I used my shot glass for this)
 1/2 cup cranberry juice




ALRIGHT NOW ITS FINALLY TIME TO MAKE THIS DRINK! SO LET'S GET STARTED WITH THE SPICY SUGAR MIX THAT WE MADE EARLIER. WE JUST WANT TO DIP THE  RIM IN WATER FIRST, THEN START TO ROTATE TO RIM AROUND IN THE DISH OF THE SUGAR MIX. WE WANT TO MAKE SURE THE WHOLE RIM IS COVERED IN THIS SPICY STUFF!

OK NOW THAT WE GOT THAT DONE LET'S START MARTINING (I JUST MADE THAT WORD UP HA HA). TODAY WE ARE GOING TO USE A MASON JAR AS OUR SHAKER, WHICH ACTUALLY WORK REALLY GREAT. TIP OF THE DAY; IF YOU DON'T HAVE A SHAKER GO AHEAD AND SAVE YOURSELF SOME MONEY BY USING A MASON JAR ANY OTHER GLASS JAR YOU HAVE LAYING AROUND YOU'RE KITCHEN. NOTE: MAKE SURE IT HAS A LID. I THEN GRABBED A HANDFUL OF ICE THREW THAT IN THE JAR THEN TOOK 4 TBSP OF OUR CRANLAPENO SAUCE AND DROPPED IN THERE TOO!

NOW IT'S TIME FOR THE LIQUOR! IF YOU HAVE A SHOT GLASS THAT WILL BE PERFECT WHICH IS WHAT I USED. AND MOSTLY ALL SHOT GLASSES EQUAL OUT TO 1 OUNCE. SO EITHER TAKE A SHOT GLASS OR MEASURE OUT AN OUNCE OF LIQUOR. OK NOW I WILL SAY THIS. YOU CAN DEFIANTLY ADD MORE LIQUOR IF YOU LIKE IT MORE STRONG. SO IF YOU DECIDE TO DO THAT JUST CUT THE CRANLAPENO SAUCE IN HALF. 

OK NOW WE ADD THE CRANBERRY JUICE. AFTER THAT ALL YOU DO IS SHAKE IT UP! 

I THEN ADDED SOME FRESH CRANBERRIES AND SLICE OF JALAPENO ON THE SIDE FOR  GARNISH. TAKE THE LID OF THE MASON JAR COVER THE TOP ENOUGH THE JUICE TO POUR OUT BUT KEEP THE ICE IN THE JAR. AND BOMB YOU HAVE A PERFECT MARTINI!

HERB DE PROVENCE ROASTED BABY POTATOES

Herb De Provence Roasted Baby Potatoes

Hello my foodies im back. I know it has been a long time since I posted anything but since I don't think anybody reads my post anyway I think im fine. I will say this I really want to blog however, I honestly find it harder then YouTube (is that crazy of me to think that)? I don't know what im going to do but i do know that today I will be posting this yummy side dish :). I came up with this side dish when I was thinking  about what to make for my first dinner party I will be hosting in a few weeks (and im nervous as hello)! To my surprise it came out great! I mean you really can't mess up roasted potatoes! 

INGREIDENTS:
1 1/2 lb baby yellow potatoes
1 1/2 tbsp herb de provence
3 tbsp EVOO
3 garlic cloves chopped
* salt/ pepper to taste
3 tbsp Alouette Garlic & Herb spreadable cheese


I have a question does anybody wash their potatoes before they start to cook them or not? I always thought about that. I always did even if Im boiling them and especially since I met my boyfriend (who is a  true germophobe) I have to wash everything! Ok so moving on we are going to start with washing our potatoes under running water and taking a wash cloth to scrub whatever dirt that is left on them. 

After our babies had a good wash, we can now move on to giving them a good poke! I just take a knife and do on poke through them. this helps them cook evenly since they are not all the same size and helps them to release any tension they may have against each other (ha ha just kidding). 

After we got all our potatoes poked; we can now move on the the good stuff. Its time to add the seasoning. We are going to add the evoo, herb de provence, and salt/pepper. Now the salt and pepper is to taste. So You can decide how much salt/pepper you want to add!



I hope you don't think we are done here! Oh No we have some more to add to these babies. we are going to roughly chop three garlic cloves and add them to the mix! 

Ok now its time to do a little re-mix and turn these babies up! Ha ha I sound so lame sometimes! Anyway make sure you get every single one of the potatoes coated with the seasoning and oil! 

Once we got our potatoes evenly coated. Now it's time to roast them. we are going to get out our skillet (cast iron preferably) and drop them in there. Making sure we spread them out so them all have room to roast! Don't forget to add a sheet of alumni foil!

We are going to roast these babies at 400 F for an overall time of 50 minutes. The first 20 minutes are going to be split up and turn the potatoes every 10 minutes and then let them roast untouched for the rest of the 30 minutes. 
After 50 minutes is up now we are going to take them out of oven drop them back into the boil and then whip out our secret ingredient! 


Yes you are looking at it right. We are going to use Garlic/herb Spreadable cheese! OMG ya'll this stuff here is bomb! Just take the 3 tbsp of it and mix it with the potatoes! Now im a happy girl! Trust me when I say this is a winner to bring to any work pot luck, family gathering, or any holiday! MASHED S/P WITH ORANGE BUTTER PECAN GRAVY

OK SO NOW THAT WE GOT THAT OUT THE WAY LET'S MOVE ON TO THIS DELICIOUS SIDE DISH THAT YOU KE FOR YOU'RE THANKSGIVING SHEN-DIG.
OK SO AS ALWAYS THIS TIME OF YEAR ESPECIALLY DURING THANKSGIVING I FIND THAT THERE IS ALWAYS A BAKING DISH FILLED WITH SLICES OF SWEET POTATOES SMOTHERED IN A CINNAMON, BUTTER, AND BROWN SUGAR. HOWEVER, THIS YEAR I WANTED TO DO SOMETHING DIFFERENT AND FUN. THAT IS WHEN I CAME UP WITH MY OWN TAKE ON SWEET POTATOES AND DID MASHED POTATOES AND SWEET ORANGE BUTTER PECAN SAUCE THAT I CALL A "GRAVY."

INGREDIENTS: (FEEDS 4-5 PPL)
 3 lbs Sweet Potatoes (small)
 1/3cup Chopped Pecans
 1/2cup Brown Sugar
 1/3cup White Sugar
 4tbsp Unsalted Butter
 2tbsp Orange Marmenlade
 1 tsp Pure Vanile Extract
 1 tbsp Cinnamon
 1 tsp Nutmeg 
 1 cup Half and Half (for gravy)
 




THE FIRST STEP IN MAKING THIS EASY AND QUICK SIDE DISH IS TOO PEEL AND CUT YOU'RE SWEET POTATOES. I USED 3 LBS OF SMALL SWEET POTATOES THAT I BOUGHT FROM MY LOCAL ALDIS STORE. IF YOU ARE USING LARGE SIZE SWEET POTOTOES THEN I RECOMMEND 4 S.P. 
AFTER PEELING THEM, THEN YOU WANT TO CUT THEM INTO CHUNKS. THIS PART DOESN'T REQUIRE A CERTAIN SIZE BECAUSE ALL YOU ARE DOING IS JUST BOILING THEM. 

PUT THE SWEET POTATOES IN A POT OF COLD WATER. FILL THE POT JUST ENOUGH TO COVER THE POTATOES. NOW ITS TIME TO ADD THE BUTTER IN THE WATER. I LOVE THIS PART BECAUSE IT GIVES THE CHANCE FOR THE SWEET POTATOES TO GET FLAVORED WITH THAT NICE BUTTERY TASTE. I USED HALF A STICK OF UNSALTED BUTTER.

WHILE THE SWEET POTATOES ARE TAKING A NICE HOT BUTTERY BATH; WE ARE GOING TO MOVE ON TO MAKING THE "GRAVY." I FIRST START OFF WITH TOASTING THE CHOPPED PECANS IN A PAN WITH NOTHING IN THE PAN BUT THE PECANS. THIS WILL HELP THE NUTS RELEASE THEIR FLAVOR AND OILS SO THAT YOU REALLY GET THAT PECAN FLAVOR THROUGH OUT THE "GRAVY." YOU WANT TO DO THIS UNTIL YOU ARE START TO SMELL THE PECANS ONCE YOU START TO SMELL THEM THEN YOU CAN MOVE ON TO ADDING THE NEXT INGREIDENT!!!!

NOW WE ARE GOING TO GET BUTTERY AND ADD HALF A STICK TO PECANS. I DON'T KNOW ABOUT YOU BUT IM GETTING EXCITED JUST BY LOOKING AT THE BUTTER MELT IN THE PAN WITH TOASTY PECANS OH YA, OH YA!!
ONCE THE BUTTER MELTS, YOU WILL SEE IT START TO FOAM AND THAT IS WHAT YOU WANT IT TO DO. NOW WE CAN ADD THE OTHER 6 INGREDIENTS (BROWN SUGAR, WHITE SUGAR, ORANGE MARMALADE, VANILLA, CINNAMON, AND NUTMEG). YOU WANT TO STIR ALL THE INGREDIENTS TOGETHER AND FOR ABOUT 5 MINUTES YOU WILL SEE THE SUGARS START TO CARAMELIZE. AFTER 5 MINUTES ARE UP YOU SHOULD MOVE ON TO THE LAST PART OF THIS "GRAVY" THAT IS GOING TO PUT IT ALL TOGETHER AND REALLY MAKE IT LOOK LIKE GRAVY!

ITS TIME TO ADD THE HALF AND HALF! THE HALF AND HALF GIVES THE SAUCE A CREAMY YET TEXTURE AND IS WHAT MAKES THE SAUCE LOOK LIKE A GRAVY. OH BY THE WAY YOU WANT TO MAKE SURE YOU LABEL THIS "GRAVY" YOU DON'T WANT ANYBODY PUTTING THIS SWEET GOODNESS ON THEIR TURKEY AND DRESSING LOL. OK BACK TO WHAT I WAS TALKING ABOUT. SO YOU ADD THE HALF AND HALF TO THE SAUCE AND STIR. LET IT COOK ON THE STOVE ON LOW FOR 9 MINUTES AND BOOM YOU HAVE ORANGE BUTTER PECAN "GRAVY."


I HAD TO MAKE THIS PICTURE BIG SO THAT YOU CAN REALLY GET A GOOD LOOK AT THIS BAD BOY! THIS IS THE FINAL LOOK OF THE "GRAVY."

NOW THAT THE GRAVY IS DONE! WE CAN MOVE ON TO THE SWEET POTATOES. WHICH IS THE EASIEST PART. I BOILED MY SWEET POTATOES UNTIL THEY WERE FORK TENDERED (WHICH MEANS UNTIL YOU ARE ABLE TO PUT A FORK IN THEM AND THE FORK JUST SLIDES RIGHT OUT). ONCE THEY WERE TENDER THEN I DRAINED THE WATER FROM THE POT AND THREW THE SWEET POTATOES IN MY STAND MIXER WITH 2 TBSP OF UNSALTED BUTTER. 


WHILE MY STAND MIXER WAS DOING ITS THING I THEN ADD WHAT I HAD LEFT FROM MY HALF AND HALF TO MAKE MY SWEET POTATOES SMOOTH CONSISTENCY! I ADDED 1/3 CUP OF HALF AND HALF. AND AFTER THAT I WAS DONE! NOW ITS TIME TO PLATE THIS BABY! I LOVE THIS SIDE DISH FOR SO REASONS AND I HOPE YOU ENJOY IT TOO! LEAVE A COMMENT BELOW IF YOU HAVE ANY QUESTIONS OR IF YOU DECIDE TO MAKE IT THIS YEAR!
